Our collection of chocolate bonbons includes a variety of dark and milk chocolate ganaches and pralinés and one of enrobed almond paste. Some people ask us what our favorite varieties are, but our chocolatier says it's like telling people which is your favorite child. Among our favorites: sage with chestnut honey, tahini, salted caramel, sour cherry, Thai iced tea, coconut cream, cappuccino ... but we're sure you'll have your own favorites.\
The only ingredient we use that you might not be familiar with is sorbitol. It sound like a chemical, but it's actually a naturally occuring sweetener found in frutis like plums. Why use it, you might ask. It has remarkable capacity to hold onto water, which helps keep your chocolate moist, yet free from bacteria. Everything else in our chocolates are ingredients you would probably use yourself if you were making chocolates.
